Many of these beauties seem too pretty to carve. But definitely not too pretty to eat. I think we’ll be keeping our pretty pumpkins around for a couple of weeks before adding them to delicious soups and risottos.

I grew up in the southwestern US and I never saw them either until I moved further north. Not sure if the variety is just a northern US thing or part of the trendy heirloom food revival. Either way, the piles of crazy pumpkins are so cool.
